Marhaba eggplant lovers,
Today was the day which I not only prepared eggplant pizza but the day I changed the mind and had a great impact on a colleague's sense of taste. She never liked eggplant because to her eggplant is tasteless. Well, not in my kitchen :)
Our friend had two slices of eggplant pizza and went for seconds serving baba ghannouj (eggplant dip) with kibbi. Yaaaay, I welcomed her to my eggplant club.
Preparation:
1 loaf of whole wheat Tannour bread OR make your own dough
1 eggplant
1 cup olive oil, basil, and garlic tomato sauce (Bertolli)
1 small onion
Salt to taste
1/2 tsp cloves
1/2 tsp black pepper
3/4 cup shredded fresco cheese
Vegetable oil for frying
Olive oil
Mint or oregano for garnish
Preparation:
With skin on, cut eggplant into small cubes. Place in a colander and sprinkle with salt
Heat 3 cups vegetable oil
Fry the eggplant. Drain on a paper towel and set aside.
Heat oven to 375 degrees F
Prepare a skillet, add a drizzle of olive oil. Cut the onion into small pieces. Sautee the onion. Add Salt, cloves, black pepper. Add tomato sauce to skillet. Simmer for 7minutes. Add the eggplant.
Place the Tannour bread in a round pan. Spread the eggplant sauce mix on top. Sprinkle with shredded cheese. Bake for 7 minutes.
Remove from oven. Garnish with mint or oregano
