I have to give the best vegetable award, I would give it to my shining vegetable, EGGPLANT! I prepared this delicious dish called "Maghmoor"(all soaked up), as a cold appetizer to have with pita bread but I have added a sweet ingredient to it, mangos. Awesome!!! I had some leftovers.
I went jogging the next day and I wanted to have something quick for lunch. I heated the Maghmoor, cooked some rice, and had it as a meal. See, you can do so much in cooking with this amazing vegetable.
Ingredients:
1 eggplant cut into big cubes
1 sliced onion
2 minced garlic
1 tsp fresh ginger
3/4 cup cooked garbanzo beans
1 tsp cumin
1/2 tsp salt
3/4 tsp caraway
1/2 tsp black pepper
1/2 cup mango salsa
Vegetable oil for frying
2 tbsp olive oil
Parsley for garnish
Directions:
Prepare eggplant for frying (leave skin on)
Cut eggplant into cubes
Sprinkle with salt and fry
Drain eggplant on a paper towel
In a pot, add 2 tbsp olive oil. Sautee the onions until dark brown
Add garlic
Add ginger
Sautee for 2 minutes
Add the eggplant
Add the garbanzo
Add salt, black pepper, caraway, cumin
Add the mango sauce
Shake the pot couple times in a 10 minute cooking time. Do not stir
Cook on low heat for 7-10 minutes
Serve cold
Garnish with parsley
