Ingredients:
1/2 deseeded pomegranate 1 big eggplant/ cut into cubes and fried. Set aside 2 flat toasted slices of pita bread 2 green onions 1 cup fresh mint 2 squeezed lemon juice 2 small red/ yellow/ or green pepper 2 cucumbers 4 cups romaine lettuce 3 cups tomatoes 1 minced garlic salt 1 tbs sumac 1 tbsp dry mint 3 tbsp pomegranate molasses 1/2 cup oilve oil Vegetable oil for frying eggplant Preparation: Cut eggplant into cubes(leave skin on). Place in a colander. Add a pinch of salt. Heat oil and fry eggplant Toss all ingredients with the fried eggplant Sahtein/Enjoy |
