Eggplant Croissant

 Happy New 2020 everyone,
Having a daily routine surrounds me with positive vibes and ENERGY plus makes me happier and puts me back on track.
 I love coming back to my kitchen to discover to learn to experiment. This is my appetizer for the day.

Ingredients:
1 eggplant cut into small cubes
1 crescent roll
1 cup tomato basil plum
3/4 cup chopped basil
1/2 cup grated parmesan
Salt
Olive oil
2 tbsp dry thyme

Preparation:
Heat oven to 400 degrees F
Cut epplant into small pieces (leave skin on).  Brush eggplant cubes with olive oil.  Place on a baking tray. Bake eggplant until dark brown.  Remove eggplant from oven. Sprinkle with salt
Reduce oven temperature to 375 degrees F
Line a pan with parchment paper. Unroll crescent dough and prepare to fill dough
In a bowl, mix tomato basil plum, eggplant, chopped basil, and grated parmesan.  Fill in each crescent with 1 tbsp eggplant filling. Roll crescents. Bake for 25 minutes
During the last couple minutes of baking, mix thyme with olive oil. Spread thyme on crescent
Close your eyes, wait a minute, smell the eggplant thyme crescent aroma, travel and come back. :)
