It is classy, it is easy, it is simple, it is Ijji in Lebanon. We whisk the eggs, add chopped tomatoes, onions, parsley, baking powder, dry mint, and salt with a pinch of black pepper. We then deep fry it.
But here at Atayeb, I prepare Ijji the "Sunday go Healthy go Easy way."
Ingredients:
4 egg whites
1/3 cup parsley
1/3 cup chopped tomatoes
A pinch of salt, black pepper, and dry mint
1 tbsp milk
1 tbsp Olive oil
Preparation:
Whisk the egg whites
Add the tomatoes, parsley, salt pepper and mint. Mix with milk
Prepare the skillet
Heat olive oil
Pour your mixture into the skillet
Cook for about 5 minutes on each side
