Do you prefer when your husband takes you out for breakfast or prepares breakfast for you?
Well, I am blessed to say my husband does both and today he prepared a healthy quick breakfast/ Suhoor that we can all enjoy with a cup of cappuccino, tea, or milk.
Here is my husband's secret Eggo.
Ingredients:
4 cups egg whites
1/2 cup chopped bell pepper
3/4 cup chopped parsley
1 cup porcini mushrooms
1/2 cup tomatoes
1 small chopped onion
4 minced garlic
1 cup sharp sheddar cheese
1/3 cup olive oil
Salt
Black pepper
1/2 tsp cinnamon
Preparation:
Whisk the egg whites by hand. Add salt, black pepper and cinnamon. Add parsley. Set aside.
Heat oven to 375 degrees F
Prepare a cast iron skillet. Add the olive oil. Sautee the bell pepper. Add the onions and the garlic. Add the mushrooms. Remove from heat. Slowly pour the egg white mix on top of the sauteed vegetables. Add cheddar cheese. Place the skillet in the oven and bake until toothpick inserted in and comes out clean.
