Egg Eggplant

Eggplant and egg lovers,
Here is my oath, I pledge lots of love to the eggplant that I will always always always use my creativity and never get bored of cooking with this beauty, #eggeggplant

Ingredients:
1 eggplant
3 eggs
one small chopped red onion
1/3 cup pomegranate molasses
Salt
Cinnamin
2 baby peppers
1 bunch cilantro
Drizzle of olive oil

Preparation:
Heat oven to 400 degrees F
Wash eggplant. Poke a hole in the eggplant and grill for an hour
In the meantime, chop onions, cilantro, and peppers
Remove eggplant from oven.  Let cool a bit.  Place eggplant on cutting board and slice in half * Keep two halves connected
Use a spoon to mash the core of eggplant a bit.  Heat a skillet with olive oil and sautee onions for 15 minutes.  Add a pinch of salt to onions and add pomegranate molasses.  Cook for 3 minutes
Spread red pepper rings on eggplant.  Add onions. Add cilantro. Crack three eggs in the centre of the eggplant.  Add a pinch of salt.  Reduce oven temperature to 375 degrees F and bake eggplant for 30 minutes.  Remove from oven.  Add a pinch of cinnamon powder
