Life is a journey so is training to become healthier, better, and smarter. I hit the road at 7:00 a.m. ran a 10 mile around memorial neighborhood along wooded trails under pine and oak trees.
Running.... and close to the end thinking of breakfast and as always thinking of something healthy, something new.
Protein for breakfast is awesome especially when you add a pinch of Italy to it.
But first, and before I share my recipe, I thank my dear friend who thought of me and brought to Nadouda's Atayeb one of Italy's treasures. PARMIGIANO REGGIANO with Oats is what's for breakfast.
Ingredients:
3/4 cup rolled oats
3 eggs
1/2 cup chopped parsley
A pinch of salt
A pinch of black pepper
1 tbsp greek yoghurt
1/3 cup grated Parmigiano Reggiano
4 tbsp olive oil
Preparation:
Soak oats in warm water for 1o minutes
In a bowl, whisk eggs, parsley, salt, black pepper, yoghurt, oats and cheese. Heat oil in a skillet. Pour the egg oat mixture. Continue cooking on medium heat until mix is fully cooked. Enjoy with tea, coffee, juice for you deserve a healthy breakfast after a great workout.
