The day I do LES MILLS Body Attack feels like having a sunshine in my pocket. The day I feel the sunshine, I cook couscous. Makes me happy just like burning 700 Calories in one hour class.
Ingredients:
3 cups pearl couscous, Jurusalem Couscous
One whole chicken (for cooking chicken: salt, one whole onion, 2 cinnamon sticks, 2 bay leaves, 2 mystic gum(optional)
1 1/2 cup pearl onion
1 can chick peas
Salt
1 tsp cinnamon
1 tbsp caraway
1 tsp cumin
1/2 tsp black pepper
Cinnamon powder
1/2 cup butter
Preparation:
Bring a pot of water to a boil. Add the chicken, salt,onion, cinnamon sticks, bay leaves. Pressure cook for 15 minutes. When chicken is cool, debone chicken
In a pot, add butter and fry onions until golden brown
Remove from heat
Add the chick peas and fry for about 5 minutes or until golden brown
Remove from heat
Add the couscous. Add more butter if needed
Add salt, cinnamon, caraway, cumin, black pepper. Roast couscous for 5 minutes
Add one cup chicken broth to couscous. stir and place on medium to low heat
Add the onions and the chick peas to pot
Do not cover couscous. Couscous should be cooked same way as risotto. You add broth and stir uncovered until fully cooked. It takes about 3 to 4 cups of chicken broth
Serve couscous on a platter. Arrange chicken on top with a sprinkle of cinnamon powder
