Cottage Cheese

My two favorite ingredients: Cheese and eggplant
I have created this spread on an organic seeded bread with sunflower seeds, flax seeds, and sesame seeds with a drizzle of pomegranate molasses and a handful of fresh cilantro and pomegranate seeds YUM

Ingredients:
4 tbsp cottage cheese
1/2 fried eggplant
2 cups vegetable oil
1 tbsp pomegranate molasses
Pinch of dry mint 
Handful of fresh cilantro
Pomegranate seeds
Sliced bread

Preparation:
Cut eggplant into small cubes.  Sprinkle with a pinch of salt.  Prepare a skillet.  Heat oil in skillet.  Fry eggplant. 
Prepare a plate. Serve cottage cheese on the plate with fried eggplant and mint.  Garnish with cilantro and pomegranate seeds.  Drizzle pomegranate molasses.
Spread on sliced bread
