Believe it or not, this recipe was on my mind flying back from SF to Atlanta. I was visiting my precious grandchild and I had to distract myself from leaving the core of my heart. Soooo
I tried this delicious, subtle, sweet recipe and I loved it!You will too
Ingredients:
1 pound red peppers
1 chopped onion
1 chopped cilantro
Handful of chopped sage and green mint
5 oz baby spinach
2 pounds chicken tenderloins *Green Wise
1 lemon juice
Olive oil
Salt
Black pepper
1 tsp garlic powder
1/2 cup ketchup
Plain yoghurt
Preparation:
Heat oven for 400 degrees F
Wash peppers. Slice in half. Prepare a pan. Cover pan with parchment paper. Place peppers on pan. Rub peppers with salt and olive oil. Grill for an hour
Marinate chicken tenderloins with salt, black pepper, garlic powder, and ketchup for an hour
Prepare a skillet. Heat a drizzle of olive oil in skillet. Add chopped onions and sautee with a pinch of salt. Add sage, mint, and cilantro to onions. Sautee for couple minutes. Add baby spinach to skillet. Sautee for another 2 minutes. Add chicken tenderloins to skillet. Cook on each side for 5 minutes with lemon juice until fully cooked.
Remove peppers from oven. Place in a blender. Blend
Serve Muhammara,pepper paste, with chicken tenderloins. Add yoghurt on the side
