Chicken lentil salad for a typical corona day, followed by home yoga, then escape into my books.

Ingredients:
1 cup black lentils
1/3 cup long grain rice
3 cups water
1 pound chicken breast or tenders
Salt
1 tbsp cumin
1 tsp nutmeg
1 tsp cinnamon
Lettuce 5 leaves
1 pepper
1 cucumber
1 tomato
3 white mushrooms
Pomegranate seeds
Handful of pine nuts
Chicken marination:
Salt, drizzle olive oil, pinch of cumin, black pepper
Salad dressing:
Salt, olive oil, 1 small lemon juice, drizzle pomegranate molasses, dry mint
Preparation:
Cut chicken into cubes. Place chicken in a bowl. Add salt, olive oil, cumin, and black pepper
In the meantime, cook lentils. Place lentils and rice in a pot. Add salt, cumin, nutmeg, and cinnamon with three cups water. Cook until water is completely absorbed.
Chop your vegetables and roast your pine nuts with a drizzle of olive oil. Next mix your salad dressing
Now time to grill your chicken or cook in a skillet. After you cook your chicken, place chicken in a food processor and pulse on low to shred chicken
Now comes the fun part. How to arrange your exotic bowl with lentils, vegetables, and chicken
