Found this potato love among the sac of potatoes and made me hmmm think, made me cook.
I love this simple easy meal and I love potatoes especially when I have to wake up so early the next day for workout. Gives me ENERGY.
Ingredients:
2 boneless skinless chicken breasts cut into small to medium cubes
4 potatoes peeled and cut small
1 1/2 tsp salt
1/3 tsp cayenne pepper
1/3 tsp black pepper
Pinch red pepper flake
1 tsp oregano
1 tbs minced garlic
Lemon juice
1 tbsp olive oil
Vegetable oil for frying
Pita bread
Preparation:
In a bowl, mix 1/2 tsp salt, cayenne pepper, black pepper, red pepper flake, oregano, and garlic. Add chicken. and chill for an hour
In the meantime, cut the potatoes. Add 1 tsp salt and fry the potatoes.
In a skillet, heat olive oil
Add the chicken
Cook for about 5 minutes on each side
Add the fried potatoes
Mix with chicken
Add a squeeze of lemon juice
Use pita bread and dip in
Serve with Greek yoghurt or salad on the side
