I like to start my posts with energy and positivity but today my post is being pushed out sharing a recipe in the midst of living a hurricane.
Hurricane Harvey came hard on all Houstonians dumping more than 20 inches of rain in some areas.
During the midst of this natural catastrophe, i feel grateful for being safe and I feel horrible thinking of the unfortunate ones who lost their homes and their belongings.
Positivity is the source of happiness. For that, I am sharing a warm and easy appetizer on a wet, cold, dark, floody day. A good souvenir from Harvey.
Ingredients:
5 potatoes
2 chicken breasts
Salt
Dash of black pepper
1 cinnamon stick
2 bay leaves
1 tbsp sumac
1 bunch parsley
Preparation:
Wash and add potatoes to a boiling pot
Boil potatoes for 20 minutes (Do not overcook)
In the meantime, boil water adding a pinch of salt, cinnamon stick, and bay leaves
Add chicken breasts
Cover and cook for 45 minutes
Remove chicken breast from heat. Let cool then place in a food processor
Pulse on low for 2 seconds
Place chicken in a bowl. Add sumac, black pepper, and chopped parsley. Mix
Cut potatoes in half
Spread chicken parsley mix on potatoes
Drizzle pomegranate sauce on top (optional)
