Chicken And Pearl Couscous

Happy Tuesday,
Do you like 30 minute meals prep?
Your option is chicken, beef, or fish.
I chose chicken for Tuesday

Ingredients:
1 cup turmeric pearl couscous
3 chicken breast or chicken tenderloins cut into cubes
1 cup pitted black olives
2 sliced avocados
1 pomegranate 
Salt
1 tbsp caraway
1 tsp cinnamon powder
Black pepper
1 tbsp chicken rub spice
Olive oil

For the tahini sauce:
1/3 cup tahini
2 lemon juice
Salt
1 minced garlic
Water to soften the sauce

Preparation:
In a skillet, heat a drizzle of olive oil. Roast couscous in skillet with a pinch of salt, caraway, and cinnamon. Add 1 cup water and simmer on medium to low heat.
In the meantime, cut chicken into cubes. Marinade with salt, black pepper and chicken rub spice. Add a drizzle of olive oil.  Cover and place in fridge.
In the meantime, slice your avocados and deseed your pomegranate
To prepare tahini sauce: In a blender, add tahini, lemon juice, salt, and garlic.  Pulse.  Add water if needed to soften sauce
Time to cook chicken:
Heat a skillet with olive oil.  Add chicken cubes. Cook for about 10 minutes.
Serve pearl couscous on a platter.  Add chicken, olives, avocados,pomegranate seeds topped with a generous drizzle of tahini sauce.
