ceviche

A flawless, fantastic, fabulous appetizer or simple, easy, light meal.

Ingredients:
2 pounds fresh fish (I used sea bass, a beautiful fish inside out)
1/2 tsp salt
1 cup fresh squeeze lemon juice
3/4 cup fresh lime juice
1 orange zest
1 tbsp white vinegar
3 green onions
1/2 cup fresh cilantro
1/2 cup fresh parsley
Fresh mint and bell pepper for garnish
Drizzle of olive oil

Directions:
Cut fish into small bite size pieces
Place fish in a flat glass tray to ensure good marination
Add salt
Add the squeezed lime and lemon juice
Add vinegar
* Fish should be fully immersed in citrus juices.  This is how it gets "cooked"
Cover and refrigerate for 3 to 4 hours
Before serving, remove the fish from marination and place in a serving bowl
Add cilantro, parsley and onions
Add bell pepper and mint
Add orange zest
Drizzle with oil
