Carrot Soup

Marhaba happy soup lovers,
Do you love your new kitchen toys as much as I love mine?
Today, I have used the Omega juicer, my new kitchen toy, for lunch.  Everyyyyone loved it!

Ingredients:
2 cups fresh carrot juice
1/2 cup fresh celery
1 whole potato
1 bunch fresh cilantro
1 minced garlic
Drizzle of olive oil
Salt
Black pepper
1/4 fresh milk
Parmesan cheese

Preparation:
Wash one big potato. Poke potato with a fork.  Place potato in a microwave and cook for 5 minutes. Remove potato from microwave.  Peel and mash potato with a masher.  Add milk to soften potato.
Place carrot juice and celery juice in a pot.  Add salt and black pepper. Add the mashed potato. Whisk carrot, celery, and potato mix. Bring to a boil.  Simmer for 10 minutes. Prepare a skillet. Add a drizzle of olive oil.  Sautee garlic and chopped cilantro.  Add garlic and cilantro to the carrot soup.
Serve with parmesan cheese
