Carrot lovers,
I was raised up hearing that carrots help you see in the dark and I believed it with passion.
True, carrots are not quite the magic eye food but they are good for us and are rich in Vitamin A
I prepared this salad after my strengthening class and had it with a skewer of kufta kabab.
It was delicious!
Ingredients:
8 carrots sliced lengthwise
1 small chopped onion
3/4 cup walnuts
1 tbsp sumac
1 tbsp ground cumin
2 tbsp dijon mustard
Olive oil
Salt
Optional: Cilantro, pomegranate seeds
Preparation:
Drizzle olive oil in a skillet. Heat skillet. Add chopped onions. Sautee onions. Add one chopped carrot to onions. Sautee carrots. Add salt. Add one cup water. Add walnuts. Cover and bring to a boil. Simmer on low heat until water is absorbed (this is your dressing)
Heat oven to 400 degrees F
Line a pan with parchment paper. Arrange carrots on tray. In a bowl, mix a drizzle of olive oil, sumac, cumin, and salt. Sprinkle on carrots. Place tray in oven. Bake for about 45 minutes
In the meantime, grind onion carrot walnut mix in a food processor/or hand processor. Add mustard and olive oil to get a creamy mixture
Spread mix at the bottom of your salad plate. Remove carrots from oven and arrange on top of the mix. Garnish with pomegranate seeds or cilantro leaves
