New mama's and baba's,
My mama taught me not to play with my food, that was one of the dinner table rules. Sorry mama, today I played with my food, just like a baby plays with mama's mood.
I love this pudding especially because we prepare it as we celebrate the birth of a new baby in the family.
Ingredients:
1/2 cup rice flour
3/4 cup sugar
1/3 ground mystic gum *optional
1 tbsp ground caraway
1 tbsp ground cinnamon
1 tsp ground anise seed
5 cups water
1 tbsp rose water
For toppings:
Shredded coconut
Almonds
Walnuts
Pistachios
Pine nuts
Pomegranate seeds *optional
Preparation:
In a bowl, soak with water almonds, walnuts,pistachios, and pine nuts for about an hour.
In a pot, mix well rice flower, sugar, caraway, cinnamon, and anise. Add water. Mix well. Place pot on stove and cook for 25 minutes, stirring constantly. At the end of the 25 minutes, add gum and rose water. Pour Mighli in cups or bowls. Let cool. Add a tbsp of shredded coconut to each cup , add nuts and enjoy!!
