blood orange cake

A beautiful walk by the reservoir after three days of heavy rain.  I dropped off my princess at the barn and headed to the reservoir. Long walks empower my soul, my heart, my energy.  
I like to relax, have fun, and take things easy on the weekends.  So no for cooking but yes for baking and having good times.

Ingredients:
1 cup butter 
1/2 cup vegetable oil
2 cups brown sugar
5 eggs
3 cups white whole wheat flour (I love this kind of flour)
2 tsp baking powder
1/4 tsp salt
1/2 cup whole milk
1 tbsp white vinegar (recipe calls for 1/2 cup buttermilk)
3 tsp vanilla extract
1 blood orange
Powdered sugar

Preparation:
Heat oven to 350 degrees F
Prepare your baking pan with nonstick baking spray.  You can also prepare two 9 inch round cake pans
Mix your dry ingredients together
Gently add the remaining ingredients
Mix on low speed for 2 minutes
Place batter in pan or pans
Arrange oranges on top of your cake (gently press oranges down into the batter to prevent burning them)
Bake 
Test with a fork for doneness
Cool in pan
Sprinkle with powdered sugar

Humbly turned out great
