Black Lentils And Rice, Mudardarah

Hello runners,
A dear recipe to my heart!

Ingredients:
1/3 cup vegetable oil for frying onions and 1/3 cup olive oil for roasting nuts
1 large sliced or chopped sweet onion
1 cup black lentils
1/2 cup rice
Salt
1 tbsp cumin
1/2 tsp white pepper
1 tsp cinnamon
A handful of walnuts, pine nuts, pistachios, raisins, and peeled split almonds

Preparation:
Heat a cooking pot with vegetable oil.  Fry onions to dark brown color/ golden brown.  (At the end of frying, you can add 1 tsp sugar to the onions to darken in color)
Remove onions from pot.  Add washed lentils and rice. Add salt, cumin, white pepper, and cinnamon. Add 2 1/2 cups water.  Bring pot to a boil.  Cover and cook on medium to low heat for 15 -20 minutes.  Add onions to pot and stir with a fork. Cover and simmer on low heat.
Heat a skillet with olive oil, roast nuts.
Mix lentils and rice with a fork. Serve Mudardarah and garnish with roasted pine nuts.
* You can have Mudardarah with yoghurt or salad to the side!
