Yesterday and at the end of his busy day, my son called and said,"Mom, I am on my way to the grocery store and craving a warm bowl of soup with a squeeze of lemon juice. What do I need to get?"
Black lentil soup or yellow soup had always been and is always present at our dinner table .
Ingredients:
2 cups black lentils
1/3 cup white rice
1 onion
Salt
2 tbsp cumin
1 tbsp coriander seeds
1 tbsp anise seeds
1 tbsp caraway
Black pepper
1 lemon
1 bunch of fresh cilantro
Olive oil
Directions:
Bring a pot to a boil. Add black lentils, rice and all the spices (salt, cumin, caraway, coriander, anise, caraway, black pepper)
Cover and cook on low heat for about an hour adding water as necessary (lentils should be tender)
In a blender, blend the lentils until smooth. Return to the stove.
Heat oil in a pan, add the chopped onion with a pinch of salt and fry for about 5 minutes. Fry the chopped cilantro with the onions then add to the lentil soup. Simmer for 5 minutes
Add a squeeze of fresh lemon juice.
*Garnish with fresh cilantro (optional)
