Today and in memory, I lived the day when I used to make college visits with my babies. From Dubai to Tampa, from Tampa to Melbourne, from Melbourne back to Dubai. The day I cooked Bazilla, peas and carrot stew cooked in cilantro garlic and tomato sauce, I texted all babies to check in early into the apartment.
A bit over happy and content...They all said,"Thanks for cooking mom. The bazilla is great."
Ingredients:
2 onions. One chopped and one whole
3 minced garlic
2 chopped cilantro
1 cinnamon stick
5 tbsp olive oil
1 pound beef stew
2 cups chopped carrots
3 cups green peas
Salt
Black pepper
1 tbsp cumin
2 tbsp tomato paste
1 squeezed lemon
Preparation:
Boil or pressure cook your beef stew. Add salt, 1 whole peeled onion, and 1 cinnamon stick *Remove scum. Cover and cook for about 40 minutes.
Heat a deep pot with olive oil. Sautee chopped onions for 5 minutes. Add garlic and cilantro. Add carrots and peas to the pot. Sautee for 4 minutes. Add beef broth to the pot. Add the beef stew. Add tomato paste, salt, black pepper, and cumin. Cover and simmer for 30 minutes.
Serve with rice on the side and a squeeze of lemon juice
