
Marhaba and happy first of November,
This warm appetizer makes me happy (besides eggplant of course), Focaccia makes me happy, Couscous (moghrabiyeh) makes me happy, Pasta Alla Norma makes me happy, Spinach Pies (fatayer) make me happier...and they are all carbs, OUCH! It is ok, as long as I choose to be happy.
Ingredients:
4 big potatoes
3 minced garlic
Salt
1/3 tsp chili red pepper (flakes)
1 tbsp cumin
1/2 tsp coriander
3/4 cup fresh cilantro
A squeeze of lemon juice
3 cups vegetable oil
Preparation:
Heat oil. Peel potatoes/wash/ and cut into medium cubes. Place in a colander. Sprinkle with salt.
Fry the potatoes for 5-10 minutes
Remove the potatoes from the frying pot and transfer to a skillet. Turn the stove to a high temperature. Place the skillet on the stove
Mince garlic and place in a deep bowl. Add salt, red pepper, cumin, coriander, cilantro and lemon juice to the bowl. Mix
Add the garlic cilantro spice mix to the skillet. Mix with potatoes for 1 to 2 minutes.
Serve with pita bread
