Ingredients:
3/4 cup cooked barley
1 pear
1/2 cup cilantro
1/2 cup parsley
2 green onions
1/2 pomegranate deseeded
1 tbsp rose water
4 tbsp of mixed lime lemon and mandarine juice (1 lemon, 1 lime, 2 mandarines)
Salt
Black pepper
Drizzle of olive oil
Directions:
Bring 2 cups water to a boil
Add barley
Cover the pot and simmer on low heat for about 15 minutes.
In the meantime, peel the pear and cut into small pieces
Place pear in a salad bowl. Squeeze 1 lemon, 1 lime, 2 mandarines. Mix and measure to make 4 tbsp
Add the juice to the pear
Wash, dry, and chop parsley and cilantro. Add to the salad bowl
Add the chopped onions
Add salt, black pepper, rose water, and pomegranate seeds
Remove barley from stove and place in a colander. Let it cool
Add barley to the salad bowl
Drizzle olive oil
Mix
