Baba Ghannouj

I do not know why I feel like joking today, not only right this minute, but all day long :)
Could it be because I am preparing Baba Ghannouj (pampered papa), a long hard run, or because it is the beginning of  fall season. Hearts Hearts Hearts

Ingredients:
1 big eggplant
3/4 tsp salt
1 tbsp plain yoghurt
1 lemon juice
1 minced garlic
1/4 cup tahini (sesame paste)
A handful of fresh cilantro
Olive oil

Preparation:
Wash eggplant, poke a hole inside the eggplant. Leave skin on. Grill or bake eggplant for about an hour.  *I love to grill mine.  It gives it a smoky flavor.
For grilling: Takes about 40 minutes
For baking on 375 degrees F: Takes about an hour

Prepare a deep bowl.  Let the eggplant cool.  Remove the skin of the eggplant and place in the bowl.  Use a wooden or marble mallet to mush/soften the eggplant.  Add salt to the eggplant, yoghurt, lemon juice, garlic, tahini, and cilantro.  Mis all ingredients.
Serve on a platter, a bowl, or create your own serving plate.
Drizzle olive oil

Serve with toasted or soft pita.
