And after the whole world knows how much I love aubergine, I roll up my sleeves and create another beauty, Tabbouleh Aubergine Salad, TA'DAAAAA
Ingredients:
2 bunch of chopped Italian parsley
1 bunch fresh chopped mint
7 sweet campari chopped tomatoes
1/2 cup cooked tri color quinoa
2 chopped green onions
1 fried aubergine
1 squeezed fresh lemon juice
Salt, to taste
2 tbsp pomegranate molasses
1/3 cup olive oil
2 tbsp dry mint
2 cups vegetable oil for frying aubergine
Preparation:
Wash aubergine. Cut into medium size cubes (leave skin on). Place in a colander. Sprinkle with salt.
Prepare a deep skillet for frying. Heat vegetable oil. Fry aubergine
In the meantime, boil 1 1/2 cups water. Add the quinoa. Cook on medium to low heat for 10 minutes.
Remove the aubergine from the skillet and place on a plate lined with paper towel. *I drain the fried aubergine by placing it first on a paper towel, then and after about 10 minutes,I transfer the aubergine to the salad mixing bowl.
Wash, dry, and chop the parsley, mint, tomatoes, and onions. Add the quinoa and the aubergine to the tabbouleh mixed salad.
Add lemon juice, salt, pomegranate molasses, olive oil, and dry mint.
