Ingredients:
2 to 4 baby aubergine
Salt
Black pepper
1/3 cup olive oil
Vegetable oil for frying potatoes
1 cup boiled quinoa
4 tbsp Chobani yoghurt
1 big potato
1/2 cup chopped cilantro
1/2 cup chopped parsley
1 tsp pomegranate sauce
Pomegranate seeds and cilantro for garnish
Preparation:
Heat oven to 375 degrees
In a bowl, mix olive oil with a pinch of salt and pepper. Cut aubergine in half (lengthwise). Core the aubergine/discard pulp.
Brush aubergine with olive oil, salt and black pepper mix. Bake for 40 minutes
In the meantime, wash and boil quinoa for 10 minutes# quinoa should be fully drained. Remove from heat.
Heat vegetable oil. Peel, wash, then cut potato into small cubes. Add a pinch of salt, fry potatoes and set aside.
Prepare a bowl, mix quinoa, yoghurt, potatoes, cilantro and parsley. Add pomegranate sauce. Mix
Remove baby aubergine from oven. Fill your sailboats with love mix.
Garnish with cilantro and pomegranate seeds
