Ingredients:
2 pounds asparagus
1 chopped red onion
Handful of white rice
1 tbsp coriander seeds
Salt
1/3 cup olive oil
1 tbsp unsalted butter
1/3 cup whole milk or water
Preparation:
Heat olive oil in a pot. Add chopped onions and saute for 10 minutes. Add asparagus to pot. Stir with onions for 10 minutes. Add salt and coriander seeds. Add one liter of warm water to pot. Add rice. Cover and cook on medium heat for 15 minutes. Let asparagus cool a bit. Place asparagus in a blender and blend. Return asparagus to the stove. Add butter and milk. Stir and simmer for 5 minutes.
Add a squeeze of lemon juice.
